Caesar rules

Leslie and I were talking yesterday about a little dinner party she’s putting together this weekend, and at one point I gave her a suggestion to make caesar salad. I realized that I suggested this not because I thought her guests would enjoy it (although I’m sure they will) but because I myself have been craving a really-good caesar salad, and finally today I gave-in and made one just for me. I had an hour to make and eat the salad while Conor napped and before picking up Belle at camp; it could be done!. Break it down:
One of things about caesar salad–and you can disagree with me on this–is that, despite it’s ubiquity, it’s presence on practically every restaurant menu in the country, it’s usually made pretty badly. I order it, and I’m disappointed. The romaine isn’t crisp, the croutons are from a box, the dressing is scant and more cream than taste, and where are the anchovies?
