Blizzard Cupcakes

Today was a snow day–yoohoo! Me, Belle, Conor, and my mom have been holed-up together all day cooking up treats and watching the big flakes fall fast and furiously. It was a perfect day for baking and there was a special request for cupcakes. I can safely say, without trying to sound like I’m boasting too much, that I made the most delicious cupcakes EVER created in the midst of a snowstorm.

I can’t take all the credit: I used a recipe from The Craft of Baking for Banana Cupcakes; but instead of making the peanut butter frosting that author/pastry cheg Karen DeMasco recommends, I chose to make cream cheese frosting.
They key to this recipe’s success is to use very ripe bananas, luckily I had two spotty brown ones on hand:
