Kung Fu Chopping

One of the best pieces of cooking advice I’ve ever read (and now that I think about it, it’s applies to other things in life besides cooking) is that a dull knife is more dangerous than a sharp one. And I try to live by this rule: I keep my knives as sharp as sin, and if I encounter one with a blade as dull as a diaper, I put it down and walk away. This has happened on occasion.
