Here is what my lunch has been the last few days–if I ever open up my fantasy sandwich shop this will be on the menu: 1. Lightly toasted slices of rye bread or health loaf bread from Eli Zabar. 2. Spread toast with miso mayonnaise (while or yellow miso blended with mayonnaise). 3. Smashed half of a ripe avocado on each slice. Sprinkle with fleur de sel, pepper, and lime juice. 4. Top avocado with thin slice of swiss cheese (optional to melt it a bit). 5. Top cheese with mixed greens. 6. Top mixed greens with raw shredded celeriac that’s been tossed with lemon juice, dijon, apple cider vinegar or champagne vinegar, grapeseed oil, and salt and pepper. 7. Eat sandwich over the sink while looking out the window and admiring spring’s miraculous early appearance. Contemplate global warming. Enjoy the birdsong. Make another sandwich.
