Who Wouldn’t Like Cauliflower This Way?

It doesn’t take a culinary genius to figure out that frying a vegetable will make it more appealing to anyone in your family who might be skeptical of its charms. But sometimes it’s good to be reminded of the magical combination of a fresh vegetable, a dip in eggs, a hearty roll in bread crumbs with salt and pepper, and flash fry in olive oil and butter.

This works particularly well with cauliflower. For some people, the sight of a giant, white, bulbous head of cauliflower at the supermarket can bring on a curious desire to find a purpose for it, but also a wariness: what can I do with that thing? will my family eat it? will it end up turning spotty and gray in the back of the ice box? maybe I should just get the broccoli…

But do not neglect the cauliflower! It is good in so many ways. Usually I prefer to roast the florets and then either toss them in lemon, cumin, and yogurt and eat as a warm side dish;
